Vanilla Sponge Cake

This eggless vanilla sponge cake is a basic cake that is made with basic ingredients. It is very simple, delicious and quick to make. You can make different cakes with the help of this base. Here is the recipe with no egg and no oven method.

Basic eggless sponge cake is perfect for all occasions. This is definitely everyone's favorite cake. It is prepared with minimal ingredients like flour, oil, sugar powder and leavening agents like baking powder and baking soda. you may add yogurt in place of condensed milk as a substitute of egg to make it more fluffier and softer.
This soft, spongy, fluffy and moist cake is very easy to make at home. Try this recipe.

Ingredients:

¼ Cup Unsalted Softened Butter
1 Cup All Purpose Flour (Maida)
½ tsp. Baking Powder
¼ tsp. Baking Soda
¼ Cup Powdered Sugar
½ Cup Condensed Milk
½ tsp. Vanilla essence 

Instructions:

Preheat the oven at 350 F/ 180 C for 15 minutes.
Sieve the flour, baking soda and baking powder. Keep aside.
Whisk butter and sugar until it becomes light and fluffy. 


Now pour the flour into the mixture. If batter is thick you can add some milk.


Add condensed milk, vanilla essence. Mix well.


Grease cake tin and sprinkle some dry flour. Pour the batter in cake tin. 


Tap the pan to even it.


Bake it for 25 – 30 minutes or till a fork inserted into cake comes clean out. 


Allow the cake to cool down for 10 minutes. Then remove the cake from tin.


Tips:

  • If you don’t have condensed milk, you can use curd.
  • Also after the batter is ready, don’t allow the batter to sit for more than the preheating time as baking soda reacts faster.
  • You can use butter paper in tin to avoid sticking to the pan. Place a butter paper into cake tin and then pour the batter.
