Lobia Dip Recipe

Ingredients:

1 cup Lobia
Salt to taste
1 garlic clove
¼ tsp. red chilli powder
¼ tsp. chaat masala
¼ tsp. black pepper powder
½ lemon juice

Instructions:

Wash and soak lobia in enough water for up to 8 hours or overnight.


Drain water completely next morning. Boil in a cooker with 1/2 glass water and 1/2 tsp. salt for 1 whistle.


Let the steam release naturally from the pressure cooker. Open the lid and press them between finger and thumb to check it's cooked or not. Drain them out. Let them cool slightly.


Take cooked lobia in a grinder. Add garlic clove, red chilli powder, chat masala, black pepper powder, lemon juice, 1/2 cup water and salt if required. 



If required add more water to get a smooth and creamy consistency.


Dip is ready to serve. Enjoy with a slice of bread.


Pro Tip: 

For the smoothest possible dip, blend the beans while they are still slightly warm. This helps the starches break down more easily, resulting in a velvety finish.
