Lauki ka Halwa | Lauki Halwa | Dudhi Halwa

Lauki ka halwa (लौकी का हलवा) is a yummy, delicious and simple Indian dessert which is made from grated bottle gourd, khoya and sugar. It is a traditional halwa and very popular in North India. It doesn’t need lots of ghee like suji ka halwa. It has a rich flavor of khoya, dry fruits and cardamom powder. Bottle gourd is also known as lauki, dudhi and ghiya. It can be taken during fasting (upwas or vrat) days.

Lauki or bottle gourd is one of the most healthy vegetable but it is disliked by many people and kids. They don’t like lauki ki sabji. Lauki ka halwa is such an interesting and tasty dish that no one can dislike it. Like lauki ki sabji, halwa is also very nutritious. It has the nutrition of milk and dry fruits. Lauki is a rich source of vitamins, minerals and fibres. Lauki helps in weight loss, reduces inflammation of liver, works as an anti-oxidant and cures tummy troubles. Lauki is consumed in many ways like sabji, raita and soup.

To prepare lauki ka halwa, first wash, peel and grate lauki, pressure cook and sauté with khoya, sugar, ghee and milk. It has to be stirred continuously. You can skip khoya and cook directly in milk but it takes lots of time and effort.

Lauki ka halwa can be served during upwas along with kuttu ke pakore. It can be served for special occasion, festival or party.

Ingredients:

500 gm. Lauki (bottle gourd)
1 cup khoya (crumbled or grated)
2 cup milk
1 tbsp. ghee
3-4 tbsp. sugar
Some chopped almond and cashews
Some raisins (kishmish)
½ tsp. green cardamom powder
1 tbsp. desiccated coconut

Instructions:

Wash, peel and grate lauki.


Add in a pressure cooker along with 1 cup milk. Cook on medium-high flame for 1 whistle. Turn off flame. You can cook directly in kadhai with milk.


Open the lid and transfer the cooked lauki in a kadhai or pan. Add remaining milk and stir continuously.


Stir occasionally in between to prevent burning. When almost milk is absorbed, add crumbled khoya and ghee.


Mix well and cook until all the milk has reduced.
Add sugar and cook till moisture is evaporated completely and mixture turns thick.


Add cardamom powder and stir.


Chopped almond, cashews, coconut and raisins. Mix properly and turn off flame.


Halwa is ready. Serve and enjoy.

Tips:

  • Bottle gourd should not be bitter.
  • You can cook directly along with milk in a kadhai or pan in place of pressure cooker.
  • Cook halwa on low to medium flame and stir continuously so that it does not stick at the bottom.
  • You can add condensed milk instead of khoya but keep in mind condensed milk has sugar so reduce the amount of sugar.
