Kaju ki Burfi | Kaju Katli

Kaju Barfi (काजू की बर्फी ) is a popular Indian sweet that is an inseparable part of our festivals and special occasions. Kaju barfi is a diamond shaped fudge like sweet made with cashews. This kaju barfi is a smooth, delicious dessert which is prepared using just a few ingredients. Here is a simple and quick kaju ki barfi recipe. This kaju burfi can be easily prepared at home. This dessert recipe is such that you will ditch the store bought kaju katli.

To make kaju ki barfi, you need only kaju, sugar and cardamom powder. You may add rose water or kewra in place of cardamom to give a flavor. Cashews are grinded and then cooked in sugar syrup to make like a dough. Roll these mixture and cut into diamond shape. That’s it…it is a simple process right but you need to follow some tips. Grind cashews into a fine powder. Don’t over grind otherwise oil that is present in cashews will release and your powder become like a paste. The sugar syrup should be thick and sticky. Here is no need to make a 1 or 2 string consistency. You can apply silver vark over it.

Ingredients:

1 cup kaju (cashews)
½ cup sugar
¼ cup water
¼ tsp. cardamom powder
1 tsp. ghee

Instructions:

Grind kaju into a fine powder. Don’t over grind them. If you get a coarse powder, sieve and again grind the coarse pieces or just let it be.


Boil sugar and water in a pan on medium flame. Let the sugar dissolve in the water. Stir gently. Let the mixture boil for 1 minute.


Then add cardamom powder and mix. Don’t make a string consistency sugar syrup. Stir and make a thick sugar syrup.


Now add cashew powder. Stir continuously to make a lump free mixture.


Keep stirring the mixture on low heat. Add a teaspoon of ghee and stir.


The mixture would start thickening and almost come together.


When it starts coming together in one form, remove the mixture from the pan.


When the mixture is slightly hot, knead it for 2-3 minutes to make a smooth dough.


Apply ghee on a butter paper. Place the dough on butter paper. Flatten the dough with the help of plate and roll in an oval shape using rolling pin. Roll to get a thickness of about ½ cm.


Cut the dough into diamond shape. Using a knife separate the kaju barfi gently. You can apply silver vark.


Serve the homemade kaju katli or store them.


Tips:

  • Avoid using refrigerated cashews.
  • Use nonstick pan to cook the cashew mixture.
  • Don’t over grind the cashews. 
  • Don’t overcook the mixture.
  • Do not skip kneading process. It is a important part to get smooth kaju katli.
