Paneer Corn Masala Roll

Paneer Corn Masala Roll (पनीर कॉर्न मसाला रोल ) is one of the best roll prepared with chapatti and filled with paneer corn masala. The chapatti is made with all purpose flour. To make filling fried masala paneer cubes, corn and capsicum are sautéed in the spices. It is enhanced with mayonnaise sauce and tomato ketchup. This is an easy to make and delicious recipe. Kathi roll or Frankie recipe are very popular as a street food. This roll has an amazing taste with a combination of paneer, capsicum and corn.

This roll is a healthy and tasty roll. There are so many wraps and rolls recipes with different variation. You may give any variation according to your taste or availability. In this recipe, I have coated the paneer with spices and then pan fry. You may give a variation like paneer tikka by using curd along with spices and grill them in oven.

Ingredients:

200 gm. paneer
½ tsp. Haldi (turmeric powder)
½ tsp. Dhania powder (coriander powder)
¼ tsp. Red chilli powder
¼ tsp. Garam masala
Salt to taste
½ tsp. Tandoori masala

For Dough-

2 cup all purpose flour (maida)
¼ tsp. salt
2 tsp. curd
½ tsp. oil
Water to knead the dough

For Filling-

2 tsp. oil to roast paneer
2 tbsp. oil 
½ tsp. cumin (jeera)
1 tsp. ginger garlic paste
1 medium size onion, sliced
1 green chilli
1 tomato, finely chopped
½ tsp. haldi
¾ tsp. coriander powder
¾ tsp. Kashmiri red chilli powder
Salt to taste
1 small capsicum, chopped
½ cup sweet corn
¼ tsp. garam masala
½ lemon juice

For Spread-

½ cup mayonnaise or malai
¼ tsp. black pepper powder
1 tsp. tomato ketchup
A small pinch salt

Instructions:

Cut paneer into cubes. Take in a bowl and add turmeric powder, coriander powder, red chilli powder, garam masala, salt and tandoori masala. 


Gently mix to coat spices on cubes and keep aside.

Kneading the dough-

In a mixing bowl, take flour, salt, curd and oil. Add required amount of water and knead to make a smooth and soft dough. Cover and keep aside.


Making Filling-

Heat oil in a pan. When it became hot, add paneer cubes and fry from each sides till they become golden brown. Remove from pan.


Heat 2 tbsp. oil in same pan. When it became hot, add cumin seeds. Let them crackle. 
Add ginger garlic paste and sauté till raw aroma goes away.


Add green chilli and sliced onion. Sauté till they become golden brown. 


Add chopped tomato, turmeric powder, red chilli powder, coriander powder and a small pinch of salt to cook tomatoes faster. Cook till tomatoes become mushy.


Add capsicum, sweet corn and mix properly. 


Adjust salt and add garam masala. Squeeze half lemon and mix properly. 


Add fried paneer cubes and gently mix so that all spices can coat on paneer cubes properly. Your filling is ready.


Making Spread-

Take mayonnaise, black pepper powder, tomato sauce and a small pinch salt. Mix well and keep aside.


Making chapatti-

Knead again dough for some seconds. Take a small portion of dough and make a smooth ball.
Roll to make a thin chapatti using dry flour.


Heat a tawa. Put this chapatti on it. Cook until brown spots appear on base. Then flip the chapatti and apply some oil. Again flip chapatti and apply oil on other side. You will see some golden brown spots. Fry chapatti from both sides by pressing with spatula or spoon. Remove from pan.

Making Paneer Corn Masala Roll-

Place chapatti on counter. Apply 1 tsp. spread over it evenly.
Put some paneer corn masala in center and roll tightly.



Wrap them in butter paper or aluminium foil from the base. You can secure the roll with toothpick.
Serve with tomato ketchup.


Tips:

  • You may use whole wheat flour in place of refined flour.
  • You may apply any type of chutney.
  • You can use fresh or frozen paneer.
  • Leftover chapattis can be used.
  • You may add some grated cheese.
