Burnt Garlic Chilli Pasta | Chilli Garlic Pasta 

Burnt Garlic Chilli Pasta is a mouthwatering, spicy, garlic flavored pasta recipe. It is an Indo-Italian fusion food which have lots of veggies and sauces. This amazing, tasty and great recipes is perfect for breakfast, starter, snack, brunch or for as a full meal. You can also pack this for kid’s lunchbox. This is an indulgent pasta dish that is easy to make and will please the whole family.

Spiral shaped pasta also known as ‘Fusilli’ pasta is used to make this lip smacking dish. Pasta is boiled and sautéed with onion, garlic, ginger, capsicum, carrots, cabbage and any vegetable of your choice. Veggies give it colourful and flavorful texture. This pasta is tempered with fried garlic at last. The addition of green chilli, black pepper powder and red chilli powder elevates its taste and spiciness. Its taste can be enhanced with any sauce like red sauce, tomato sauce, white sauce, pizza sauce or green chilli sauce.

When you get bored from usual breakfast, you can cook this pasta. This easy pasta can be served during breakfast or as an evening snack. Even you can take it as a full meal.

Ingredients:

2 cup Fusilli Pasta
Salt to taste
2 tbsp. oil
1 tbsp. chopped garlic
1 tsp. ginger paste
1 green chilli, slit in between
1 medium size onion, chopped
½ cup carrot, julienne
1 medium size capsicum, chopped
1 cup cabbage, chopped
1 tbsp. vinegar
1 tbsp. soya sauce
¼ tsp. black pepper powder
½ tsp. red chilli powder
1 tbsp. tomato sauce

For Garlic Tempering –

½ tbsp. oil
1 tsp. garlic, chopped

Instructions:

In a pan, boil enough water along with 1 tsp. salt. When water comes to boil, add pasta. Begin to boil pasta on medium to high flame.
Boil for 10 minutes or till pasta becomes soft. Keep stirring so that it will not stick at the bottom.


Once it has done, drain off the water and pour some cold water. Keep aside.


Heat oil in a pan or kadhai. Add chopped garlic and ginger paste in hot oil. Saute till raw aroma goes away.


Add chopped onion and green chilli. Saute till they become translucent.


Now add all vegetables cabbage, carrot and capsicum. Mix properly.


Add vinegar, soya sauce, black pepper powder and red chilli powder.


Season with salt as per taste. Mix very well. 
Add pasta and stir fry for a minute.


Add tomato ketchup and mix well. Pasta is ready.


For garlic tempering heat ½ tbsp. oil in a pan.
Add chopped garlic and fry till they become crunchy and golden brown.


Pour this fried garlic over pasta and serve.


Tips:

  • Add your choice of vegetables in pasta. You can add tomatoes, baby corn, celery, beans or peas.
  • You can add any other spices like turmeric powder, coriander powder or garam masala to give an Indian touch.
  • You can add herbs.
  • To make it more spicy, add more green chillies.
  • You can add some cheese.
