Vegetable Masala Appe | Fried Appe

Vegetable Masala Appe or fried appe ( मसाला अप्पे ) is a delicious and perfect option for breakfast. Appe also known as rava Appe or paniyaram is basically south Indian dish that is now very popular in all over India. It is easy to make and have all the goodness of vegetables.

To make vegetable masala appe, appes are prepared and fried with vegetables and spices. To make appe, a batter is made with rava, curd and eno and tempered with chana dal, urad dal and rai. You will need an appe or paniyaram pan. Pour this batter in pan and cooked until the outer layer become crunchy and properly cooked from inside.

After this appes are sautéed with lots of vegetables like onion, capsicum, cabbage, and carrot. Its flavor is enhanced with red chilli powder and tomato ketchup. You may add any type of vegetables that you like or available in your kitchen. Colorful vegetables make this dish healthier.
This soft and spongy appe will give you a burst of flavors. This is an easy and quick recipe if you have leftover appe. Masaledar twist makes this recipe perfect to serve for guests. Ingredients:

2 cup suji
½ cup curd
Salt to taste
1 tsp. eno

For Tempering-

2 tsp. ghee
1 tsp. rai (mustard seeds)
1 tbsp. chana dal
1 tbsp. urad dal
¾ tsp. red chilli powder

To make masala appe-

2 tbsp. ghee
¾ tsp. rai
Some curry leaves
1 medium onion, finely chopped
1 green chilli, slit in between
1 cup cabbage, chopped
2 medium tomatoes, finely chopped
½ carrot, finely chopped
1 capsicum, finely chopped
Salt to taste
½ tsp. red chilli powder
1 tbsp. tomato sauce
Some spring onion for garnishing

Instructions:

Making Appe-

Take sooji, curd and salt in a bowl.
Add water and mix properly. Combine well to make lump free batter.


In a pan heat 2 tsp. oil. Add mustard seeds or rai. Let them crackle.
Add chana dal and urad dal. Roast for some seconds. Add red chilli powder.


Pour this tadka in batter. Mix properly.


Cover and leave it for 15 minutes. Sooji will absorb water.
After 15 minutes if required, add more water to make batter consistency.
Add Eno and mix quickly.


Heat an appe pan on medium flame. Add ghee in each mould. Pour the batter and cover with lid. Cook on low flame till they become golden brown.


Flip them with the help of wooden skewer or toothpick.


Cover again and cook from another side.
You may flip again to properly cook them. Remove from pan.


Making Vegetable Masala Appe-

Heat 2 tbsp. ghee in a pan. Add mustard seeds and curry leaves. Let them crackle.
Add chopped onion and green chilli. Saute them till they become translucent.


Add cabbage, tomatoes, carrot and capsicum. Mix well.


Adjust salt and saute for some seconds.
Add red chilli powder and tomato sauce. Mix well.


Add appe and mix properly to combine all.


Garnish with chopped spring onion.


Vegetable masala appe is ready to serve.

Tips:

  •   You may use leftover appes.
  •   Adjust spices according to your taste.
  •   You may use vegetables according your availability and choice.
  •   You may sprinkle some herbs and black pepper powder.
