Eggless Vegan apple cinnamon cake

Eggless apple cinnamon cake is a soft, vegan, fluffy and delicious cake with an amazing combination of apple and cinnamon. If you love cinnamon flavor, this cake is surely a delight and you won’t be able to stop yourself to devour this delicious cake. This will be a family fall favorite in even less time than it takes to make it. This cake is packed with all nutrition of fresh apples. This apple cake is incredibly easy to make and can be prepared with easily available ingredients at home.

This homemade apple cake is prepared with apple puree, fresh grounded cinnamon powder, all purpose flour and leavening agents. It not only gets flavor from the cinnamon, but also from vanilla essence. I never thought a Cinnamon Apple Cake could taste so good but one bite of this soft and fluffy masterpiece was full of excitement. Cinnamon and apple are like matches made in heaven. It’s a vegan cake so I have used water to get perfect consistency. You can use milk or coconut water in place of water.

Apple cinnamon cake is the perfect breakfast, dessert or snack cake. If you are looking for a kid-friendly snack, or an adult-friendly dessert (or breakfast), it’s a perfect choice.

Ingredients:

1.5 cup all purpose flour (refined flour)
½ tsp. baking soda
1 tsp. baking powder
A small pinch salt
1 cup chopped apple for puree 
¼ cup oil
¾ cup sugar
1 tbsp. vinegar
½ tsp. cinnamon powder
1 tsp. vanilla essence
Some chopped apple 

Instructions:

Preheat the oven at 350 F/ 180 C for 15 minutes.
Take a bowl and sift all dry ingredients flour, b. powder and b. soda.


Take chopped apple and sugar in a blender. Blend to make puree.


Pour in a bowl. Add oil, cinnamon powder, salt, vanilla essence and vinegar. Mix well.


Add dry ingredients and mix in one direction.


Add some water, if required to get perfect consistency.


Add some chopped apple and mix.


Grease cake moulds and pour mixture evenly. Tap to even it.


Decorate with some apple slices.


Place it in oven and bake it for 25 – 30 minutes at 180 degree celcius or till a fork or toothpick inserted into cake comes clean out.


Allow the cake to cool down for 10 minutes. Then remove the cake from mould and place over a wired rack.


Let it cool completely.

Tips:

  • You’ll need to peel and then chop your apple discarding the core.
  • Use fresh baking powder and baking soda.
  • Mix the dry ingredients with the wet ingredient until combined and try not to over mix. 
  • Bake until golden and a skewer inserted in the middle comes out clean.
  • You can add a mixture of dry fruits and nuts for a crunchy feel and taste.
  • Use freshly grounded cinnamon powder.
