Cabbage noodles soup | vegetable noodle soup 

Cabbage noodles soup or vegetable noodle soup or Healthy Winter Soap is a perfect and amazing way to consume green leafy vegetable. This steamy vegetable soup is a yummy combination of fresh cabbage and noodles. It is not just easy but also a quick and vegan recipe. Keep warm yourself with this soup on a cold day. This soup is a great way to lighten up heavier meals.

Choose your favorite veggie and add to make it more healthy and nutritious. Cabbage should be finely chopped. Here is no need to add the flour like corn flour or arrowroot to thicken soup as noodles are boiled directly in soup and they give thickness to soup. Addition of ginger, garlic and black pepper makes it more flavorful. You can add herbs and spices as per your taste. It should be slightly thick. It will warm you up in chilly winters. During the winter season, I make this soup very often as cabbage is easily available in fresh and organic form. The flavour and texture in this soup are an addictive combination, making it a firm Indo Chinese food.

It can be served as a starter or appetizer before meal. It is not only soup, but we can say it is a vegetable stew. It should be served warm otherwise it would not give taste better. So ladle up your servings while the soup is nice and hot.

Ingredients:

1 tsp. ghee
1 tsp. ginger paste
1 tsp. chopped garlic
1 onion, chopped
2 cup cabbage, shredded
¼ cup capsicum, chopped
Salt to taste
Some noodles
¼ tsp. black pepper powder
1 tbsp. vinegar
1 tbsp. soya sauce
Some chopped spring onion for garnishing

Instructions:

Add 1 tsp. ghee in a pan. 
Add ginger paste and chopped garlic. Saute till raw aroma goes away.


Add chopped onion and saute till they become translucent.


Add shredded cabbage, chopped capsicum and 1 glass water.


Add noodles and salt to taste.


Cover with lid and boil for 10 min on low flame.
Noodles should be completely cooked.


Add black pepper powder, vinegar and soya sauce.


Mix properly.
Garnish with some chopped spring onion and serve hot.


Tips:

  • As you prefer, you can also add any type of vegetables. You can add bean, carrot, sprouts, mushrooms or celery.
  • Chop veggies finely and in small pieces.
  • Adjust the salt as required as soy sauce contains salt.
