Vegetable Masala Idli | Masala Idli

Vegetable masala idli (मसाला इडली ) is a healthy and tasty snack recipe. It can be prepared with leftover idlis. Here in this recipe, I have prepared fresh idlis using rava and curd batter. These idlis are fried with lots of veggies and spices. Vegetables like cabbage, carrot, capsicum, beans and spring onion make this dish healthier. This soft and spongy idlis will give you a burst of flavors. This is an easy and quick recipe, if you use leftover idlis.

To make this recipe prepare idli batter by just mixing sooji, curd, salt and leavening agent. Give a tadka of mustard seeds, chana dal, urad dal and curry leaves. You can prepare them using traditional batter made of urad dal and rice. They are steam cooked and then fried with vegetables and spices.

Ingredients:

For Idli-

2 cup sooji
½ cup curd
Salt to taste
Water to make batter
1 and ¾ tsp. eno

For Tadka-

2 tsp. oil
¾ tsp. mustard seeds
1 tsp. chana dal
1 tsp. urad dal
5-6 curry leaves

To fry idli-

3 tbsp. oil
¾ tsp. mustard seeds
14-15 curry leaves
1 tsp. sesame seeds
2 green chilies, chopped
1 onion, chopped
3 tomatoes, chopped
Salt to taste
½ tsp. Kashmiri red chilli powder
½ tsp. coriander powder
1 cup cabbage, shredded
1 carrot, grated
1 capsicum, chopped
½ cup beans, chopped
¼ cup spring onion, chopped
1 tsp. amchoor powder
¼ tsp. red chilli powder
Some chopped spring onion for garnishing

Instructions:

Making Idlis-

Take sooji, curd and salt in a bowl.


Add water and mix properly. Combine well to make lump free batter.
In a pan heat 2 tsp. oil. Add mustard seeds. Let them crackle.
Add chana dal and urad dal. Roast for some seconds. Add curry leaves.


Pour this tadka in batter. Mix properly.


Cover and leave it for 30 minutes. Sooji will absorb water.
After 20 minutes if required add more water to make batter consistency.


Grease idli plates and boil water in steamer.
Add Eno and mix quickly.


Do not over mix the batter otherwise air bubbles will escape making idli hard.
Pour the batter in idli plates.


Place them in steamer.
Cover with lid and steam cook for 10-15 minutes.
After that insert knife or toothpick to check that it has done.


Cool slightly and remove idli with a spoon.


Cut all idlis into two pieces.


Making Vegetable Masala Idli-

Heat 3 tbsp. ol in a pan. 


Add mustard seeds and let them crackle.
Add curry leaves, sesame seeds and chopped green chillis.


Add chopped onion and saute them till they become translucent.


Add chopped tomatoes and a little bit salt so that tomatoes can cook faster.
Once tomatoes become mushy, add Kashmiri red chilli powder and coriander powder. Saute the spices for some seconds.
Add cabbage, carrot, capsicum, beans and spring onion. Mix well. Adjust salt.


Add idli pieces and gently mix.
Add amchoor powder and red chilli powder. Mix properly to combine all.


Vegetable Masala Idli is ready. Serve them hot.


Tips:

  • You may use leftover idlis.
  • You can make idlis using traditional urad dal and rice batter.
  • Adjust spices according your taste.
  • You may use vegetables according your availability and choice.
