Malai Laddu | Malai Ladoo

Malai laddu or Malai Ladoo ( मलाई लड्डू ) is an easy and tasty dessert recipe made with paneer, milk, milk powder and sugar. It is flavored with cardamom powder. Its taste is similar to sandesh and kalakand. It is a simple recipe and can be made easily at home. It can be prepared for any festival or special occasion. In India sweets and desserts are specially prepared on the auspicious occasion or festival like Diwali, Ganesh Chaturthi.

Malai ladoo is prepared using milk, sugar and ghee. You may use fresh homemade paneer by curdling milk or store bought. To bind up paneer, condensed milk is required which can be made by reducing milk till half or using milk powder. Paneer and condensed milk is needed to be cooked with sugar until it reaches a consistency so that you can make ladoos. You can add flavorings of your choice like cardamom powder, saffron or kewra water.

These malai ladoos can be stored for 4-5 days in refrigerator. Malai ladoo is a pretty and perfect festive sweet.

Ingredients:

200 gm. Paneer
1 cup milk
1 cup milk powder
¼ cup sugar
½ tsp. cardamom powder
1 tsp. ghee
Pistachio for garnishing

Instructions:

Grate paneer finely using grater or food processor.


Boil milk in a pan and add sugar. Cook on medium flame till sugar dissolves.


Add milk powder and mix properly to remove lumps.


Cook on medium flame stirring continuously until mixture thickens.


Add grated paneer and mix to combine. 


Add ghee and continue cooking the mixture. It will start leaving the pan and hold shape.


Add cardamom powder and mix. 


When mixture looks dry enough to hold the shape, turn off flame.
Transfer to a bowl and allow the mixture to cool completely.


Apply a bit of ghee on your palms. Take a small or medium portion and give a round and smooth shape into ladoos.


Garnish with some pistachio.
Your malai ladoos are ready.


Tips:

  • You may use store bought paneer.
  • You may use store bought condensed milk.
  • You may skip milk powder.
  • You may use any flavor rose or saffron.
  • Do not cook too much otherwise paneer starts to become rubbery.
