Vegan Nutri Masala | Soya Nuggets Curry

Soya masala is a delicious wholesome curry recipe that is prepared with soya chunks. Soya chunks are also known as meal maker, nutri, soya nuggets and soya vadi. It is a vegan and gluten free recipe. Because of its texture, it is also known as vegetarian’s “non veg meal”. Soya chunks are also available in the form of soya granules in the market. It is very nutritious and rich in protein. This delectable North Indian recipe is packed with healthy elements.

It is similar to any gravy recipe. The gravy is prepared by mixing the onion-tomato paste in a melange of spices which leads to an exceptionally flavored curry. Most Indians love gravy recipes and what better way to use a meat substitute than in delicious gravy. Use medium size soya chunks for this recipe. Don’t forget to boil and squeeze all water of soya nuggets. This method gives an amazing taste to soya bean nuggets. Then they are sautéed with ginger garlic paste, onion, tomatoes and spices like turmeric powder, coriander powder, red chilli powder, amchoor powder and garam masala. If you want more curry, just add more quantity of water.

Ingredients:

Soya chunks 2 cup
2 tbsp. mustard oil
2 bay leaves
1 inch cinnamon stick
2 cloves
5-6 black peppercorn
½ tsp. cumin seeds
A small pinch heeng
1 tsp. ginger garlic and green chilli, grinded
1 onion, grinded
3 medium sized tomatoes paste
½ tsp. turmeric powder
½ tsp. coriander powder
½ tsp. Kashmiri chilli powder
Salt to taste
¼ tsp. garam masala
½ tsp. amchoor powder

Instructions:

Boil sufficient water in a pan. Add soya chunks in boiling water.


Boil them with the help of spatula. Keep boiling until they swell up.


Once boil perfectly, drain them. Rinse very well with fresh water. 


Press and squeeze the chunks really well to remove all the extra water the chunks have absorbed. Set aside.



Add oil in a pan on medium heat. Add 2 bay leaves, cloves, cinnamon stick and black peppercorn.


Add ½ tsp. cumin and a small pinch of heeng. Let them crackle.


Add ginger, green chilli and garlic paste. Let them golden brown in colour.


Add grinded onion and sauté on medium flame. It will start to caramelize and golden in color.





Add tomato paste. 


Add turmeric powder, chilli powder and coriander powder. Sauté until the oil oozes out. 


Add soya chunks and 1 cup water. 


Adjust consistency according to your preference. 
Add Salt, amchoor powder and garam masala. Mix well.


Cover with lid and cook for 15 minutes on low flame.


Open the lid and check consistency.


Garnish with green chilli and ginger juliennes. 


Soya masala is ready to serve.


Tips:

  • You may use some soya granules along with soya chunks.
  • You may use chopped capsicum along with corn.
  • You may add some paneer cubes.
  • You may add lemon juice or curd for more tanginess.
  • Don’t forget to boil soya chunks. 
  • You can also add some cream.
