Aloo Tikki Chaat

Aloo Tikki Chaat is a famous street food of India prepared with aloo tikki, chutneys and spices. It is no onion no garlic recipe. This chat has a crispy, tasty and lip smacking aloo tikki or potato petties. It can be served as snacks or starter. Whenever we go to the market, we find street food. Aloo tikki chat is the first which comes in our mind. You can make this easily at home.

In India there are so many varieties of chat like pani puri, papdi chaat, dahi bhalle and samosa chaat but aloo tikki chaat has its own place. It is loved by everyone. Aloo tikki is made with boiled potatoes and arrowroot, rice flour or corn flour. Aloo tikki has a key role in this recipe. It can be stuffed with masaledar peas. It has to be perfectly crispy. It can be shallow fried or deep fried.

Aloo tikki is topped with chole or yellow peas masala (peeli matar). The addition of two types of chutneys which are tangy sweet tamarind chutney and spicy green coriander chutney give it a variation of flavours like sweet, sour and spicy. I have already shared the recipe of sweet chutney and coriander chutney in previous post. It can also be garnished with chopped coriander, sev or pomegranate.

Aloo Tikki Chaat

Aloo tikki chat has so many variations in itself. At some places it is served with or without curd. You can change its taste as per your preference. In UP it has no tomatoes, onion, sev, pomegranate, curd, just has chutneys, chole and spices. Here I am sharing the UP style aloo tikki chaat.

Ingredients:

For aloo tikki –

5-6 Potatoes, boiled
½ cup chopped coriander
2 tablespoons arrowroot
Oil for frying

For chole-

1 Cup Kabuli Chana, boiled
2 Medium Sized Tomato (pureed)
2-3 Green Chilies, chopped
1 Inch Piece of Ginger, chopped
1 Teaspoon Jeera (Cumin Seeds)
1 Pinch Asafoetida (Heeng)
1 Teaspoon Turmeric Powder (Haldi)
1 Teaspoon Red Chilli Powder
½ Teaspoon Coriander powder
1/2 Teaspoon Garam Masala
1/2 Teaspoon Amchur (Dry Mango Powder)
Salt as per Taste
2 Tablespoon Oil

For aloo tikki chaat-

½ cup imli ki chutney
½ cup green coriander chutney
½ Teaspoon chaat masala
½ Teaspoon black salt

Instructions:

Making chole for tikki-

In a pan heat oil, add cumin and heeng.


When cumin splutters add chopped green chilli and ginger. Fry for some seconds.
Add tomato puree, turmeric powder, coriander powder and red chilli powder.


Sautee puree till oil starts to leave the sides of the masala. Stir in between occasionally.
Add boiled chana, stir till all the chana are mixed with spices, around 2 minutes.


Add 2 cup water and salt. Add garam masala and amchoor powder and mix properly. Cook for 5 minutes on low-medium flame so the chana absorbs all the masalas and gets good flavors and taste. Chole for aloo tikki chat is ready.


Making aloo tikki –

Peel and mash potatoes in a bowl. Add arrowroot powder and chopped coriander.


Combine well and make small round balls. Shape or flatten them in to tikkis or patties.


Heat 2 tbsp. oil in a pan on medium flame. Place tikkis in pan and begin to fry them.


When one side is golden and crisp, flip each tikki and fry the second side. If required, pour some oil around them. Fry until both surface become golden brown and crispy.


When they become crispy, transfer them in a serving plate.

Making Chaat-

Spread some chole over tikki.
Top with sweet chutney and coriander chutney.


Sprinkle some chaat masala and black salt. You can also sprinkle some bhuna jeera.
Serve aloo tikki chaat immediately.

Tips:

  • You can add corn flour or rice four in place of arrowroot. If you don’t have them you can add ½ cup soaked poha. Mash and combine with potatoes. Believe me it also makes tikki crispier.
  • You can stuff aloo tikki with green matar to make it healthy.
  • Tikkis should be hot at the time of serving. If they cool down, it will not give good taste.
  • Adjust the topping ingredients according to your taste.
