Aloo Paneer Ka Paratha

Aloo Paneer Paratha (आलू पनीर का परांठा) or Potato and cottage cheese paratha is a healthy combination of aloo and paneer. This is a no onion no garlic and easy to make paratha recipe. This delicious and popular paratha is a fried Indian flatbread paratha that stuffed with potato, paneer and basic Indian spices. The variation depends on your choice and preference. You can add onion, ginger, garlic and vegetables of your choice.

Aloo paneer paratha is a healthy version of aloo paratha because of the addition of paneer. It is an all-time favorite paratha at home. Paneer and aloo stuffing not only enhance the taste of paratha but also make this healthy as paneer contains a fairly high level of fat and proteins as well as some minerals, especially calcium and phosphorus. It is also a good source of fat soluble vitamins A and D.

The preparation of this paratha is very similar to traditional aloo paratha. To make aloo paneer paratha knead a soft and smooth dough. Grate or crumble paneer and mix with boiled and mashed potatoes. Add basic spices like coriander powder, red chilli powder, amchoor powder, garam masala and of course salt.

These aloo paneer parathas can be served with raita or pickle. You can also pack it in kid’s lunch box. This paratha is an ideal breakfast, brunch or lunch recipe.

Aloo Paneer Ka Paratha

Ingredients:

For Dough -

2 cups atta (Whole wheat flour)
¼ tsp salt
Water as required

For Stuffing –

1 cup crumbled paneer
2 medium size potato
A small pinch heeng
½ tsp red chilli powder
½ tsp coriander powder
¼ tsp amchoor powder
salt to taste
¼ tsp. garam masala
1 green chilli, chopped
Oil, for frying

Instructions:

Making Dough -

In a mixing bowl take wheat flour and salt. Mix it with your fingers.
Add water and gather to form a soft dough. Knead it well.
The dough should be smooth and soft. Allow it to rest covered for at least 30 mins.


Making Stuffing-

Meanwhile wash the potatoes well. Add with enough water in a pressure cooker. Boil on medium flame for 4-5 whistles or till they become soft.
Once potatoes cool down, peel and mash.
Crumble paneer finely and mix with mashed potatoes.


Add salt, coriander powder, red chilli powder, garam masala, heeng, amchoor powder and chopped coriander. Mix everything well.

Making Paratha –

Make medium sized balls from the dough. Roll it a little with the help of dry flour into a circle of 4-5 inch diameter.
Add 1-2 tbsp. aloo paneer stuffing in the center.
Bring the edges together, make ball and flatten it with your hands.


Then apply a little dry flour, now roll it very gently and carefully into about 7 inch diameter circle using dust flour.


Heat a tawa. Put this stuff paratha on it. Cook until brown spots appear on base. Then flip the paratha and apply some oil. Again flip paratha and apply oil on other side. You will see some golden brown spots. Fry paratha from both sides by pressing with spatula or spoon.


Paratha should become golden and crispy from both sides.
Put some butter over paratha and serve.

Tips:

  • You can use ghee in place of oil to make more aromatic.
  • You can add chopped onion and ginger to give a variation.
  • You can use either homemade or store bought paneer.
  • You can add chopped coriander leaves.
