Kathi roll (काठी रोल) also known as Frankie is one of the most popular and flavorful street food that is basically from Kolkata cuisine. It is a wholesome meal in which soft, flaky chapatti is stuffed with spicy vegetables and enhanced with sauces. You can find it easily in restaurants or in roadside stalls. You can make it whenever you need something quick and delicious as it is a simple, easy and quick recipe. If you are in hurry, you can grab it on the move. This recipe has so many variations and can be made with ingredients that are available in your kitchen. Just bring together few veggies, wraps along with sauces and spreads of your choice, assemble them and enjoy with your family.

Kathi roll is prepared by making chapatti and stuffing in which vegetables sautéed in spices. Apply cheese and your favorite sauces over chapatti, put some stuffing and grated cheese and then roll the chapatti tightly. To make chapatti, whole wheat flour, all purpose flour (maida) or multigrain flour can be. I have used in the stuffing potatoes, capsicum, beans, green peas and onions. You may use paneer, noodles or mixed vegetables in the filling. I have used cheese spread, grated processed cheese, green chutney and chopped onion and tomatoes for topping.

You can make it for weekend meal or party. These veg kathi roll can be made for brunch, breakfast, dinner or lunchbox.

Ingredients:

For Filling:

2 potatoes, boiled & mashed
1 medium sized onion, chopped
½ tsp ginger garlic paste
¼ cup French beans, finely chopped
½ capsicum, finely chopped
½ cup green peas, boiled
½ tsp chilli powder
½ tsp coriander powder
oil for deep frying
salt to taste

For Chapatti:

2 cups wheat flour
½ teaspoon Salt
Water as required

For Topping:

2 tbsp. Cheese Spread
2 tbsp. Green coriander chutney
1 cup grated processed cheese
Some chopped tomatoes and onion

Instructions:

Kneading the dough:

Take Flour in a mixing bowl. Add salt and mix them using your hands.
Add water and make a dough. Knead the dough with your hands till the dough is smooth and soft and it is not sticking on your hands anymore.
Now cover all sides of the dough with clean moist cloth for 20-25 minutes.

Making Vegetable Filling:

Heat 1 tbsp. oil in a pan on medium flame. Add chopped onion and ginger garlic paste. Saute till raw aroma goes away.

Add chopped beans, capsicum and green peas. Saute for 1 minute. Add mashed potatoes, chilli powder, coriander powder and salt. Mix well and keep aside.

Making Chapattis:

Heat a tawa on medium heat.
Make a ball from the dough. Apply dry wheat flour and roll to thin roti.

Place the chapatti on a hot tawa. When you see some bubbles, flip it and cook with the help of spatula.
Apply oil on both side and cook.


Remove and transfer on a plate.

Assemble Kathi Roll:

Apply Cheese spread on chapatti.

Then apply some green chutney.


Place the stuffing in the center.

Add some chopped tomatoes and onions.
Add some grated cheese and roll tightly.


Wrap them in butter paper or aluminium foil from the base. You can secure the roll with toothpick.

Serve with tomato ketchup.

Tips:

  • Leftover chapattis can be used.
  • You may use any type of flour to make chapatti.
  • You may add vegetables of your choices.
  • You may use mayonnaise sauce in place of cheese spread.
  • Add some shredded cabbage and carrot along with onion and tomatoes for topping.
