Veggie Mac n Cheese

Veggie Mac n Cheese or Vegetable macaroni and cheese is a healthy and ultimate dish for cheese lovers. This Indian style veggie loaded macaroni is a fusion recipe. This recipe is prepared with macaroni, lots of vegetables, cheese and spices. Macaroni is loved by kids and this healthy yet delicious recipe is a perfect option for these picky eaters.

Veggie Mac n Cheese


To make veggie mac n cheese you may add any type of vegetables which you prefer. Colorful vegetables make this recipe healthier and tastier. 


This elbow shaped macaroni pasta are boiled and sautéed with vegetables, soya sauce, vinegar, cheese and spices like black pepper powder, red chilli powder. This recipe has no milky white sauce. You may use any type of cheese.

Vegetable macaroni and cheese

This veggie mac n cheese can be prepared for breakfast, evening snacks or as a full meal.

Ingredients:

2 cup Macaroni
½ tsp. salt
2 tbsp. oil
1 medium size onion, chopped
1 tomato, finely chopped
½ cup capsicum, chopped
½ cup French beans, chopped
1 cup cabbage, chopped
¼ tsp. red chilli powder
1 tsp. sugar
¼ tsp. black pepper powder
1 tsp. vinegar
1 tsp. soya sauce
¾ cup cheese, grated

Instructions:

In a pan, boil enough water along with ½ tsp. salt. When water comes to boil, add macaroni. Begin to boil macaroni on medium to high flame.


Boil for 10 minutes or till macaroni becomes soft. 


Keep stirring so that it will not stick at the bottom.
Once it has done, drain off the water, add cold water and keep aside.


Heat oil in a pan or kadhai. Add chopped onion in hot oil.


Sautee till the onions become translucent. Add chopped tomatoes and cook till they become soft.


Now add all vegetables cabbage, capsicum and beans.
Sautee for 1 minute till vegetables become half cooked. I don’t cook it completely as they will give some crunchiness. Season with salt as per taste. Mix very well.
Then add sugar, black pepper powder and red chilli powder. 


Add vinegar and boiled macaroni. Mix properly.


Add soya sauce and mix.


Add grated cheese and mix to combine.


Veggie mac n cheese is ready to serve.

Tips:

  • Add your choice of vegetables in macaroni. You can add spring onion, baby corn, celery or peas.
  • You can add any other spices like turmeric powder, coriander powder or garam masala to give an Indian touch.
  • You can add herbs like oregano.
  • After adding cheese, you may bake macaroni.
