Vermicelli Chow Mein

Vermicelli Chow Mein is unique and delicious stir fried vermicelli dish that is prepared in the similar way of chow mein. It is a quick and easy recipe. It can be cook easily in just 20 minutes. It is a perfect breakfast recipe. Vermicelli is made in different ways with many different variations in different places. You can made upma or pulao using vermicelli. It is so light that it is known to be an all-time breakfast recipe.

This recipe is loaded with lots of veggies and spices. To make vermicelli chow mein, boiled vermicelli is stir fried with garlic, onion, spring onion, cabbage, carrot, capsicum and beans along with tomato sauce, soya sauce and vinegar. Roasted vermicelli is used to make this dish. If you don’t have dry roast in a pan on low flame till they become golden brown.

Vermicelli chow mein can be served as a breakfast, brunch or evening snack. Kids would just love this dish.

Ingredients:

2 cup vermicelli (roasted)
Salt to boil
Water to boil
3 tbsp. oil
3-4 garlic cloves, chopped
1 onion, chopped
2 green chillies, chopped
1 tbsp. spring onion, chopped
1 small carrot, juliennes
1 cup cabbage, shredded
1 small capsicum, chopped
1 tbsp. beans, chopped
Salt to taste
¼ tsp. red chilli powder
¼ tsp. black pepper powder
1 tbsp. soya sauce
2 tsp. vinegar
1 tbsp. tomato sauce
Some chopped spring onion for garnishing

Instructions:

If you are not using roasted vermicelli, roast them. For this, dry roast vermicelli in a pan till it turns golden brown. Keep stirring them and roast without burning.
Boil water in a pan and add roasted vermicelli and salt.


Boil for 3 minutes or until they turns soft.


Strain the vermicelli with the help of colander. Pour cold water over it to stop cooking process.


In a kadhai or pan, heat oil on medium flame. Add chopped garlic cloves and saute till raw aroma goes away.
Add chopped onion and saute till they become translucent.


Add chopped green chillies, spring onion, carrot, cabbage, capsicum and beans. Cook for one minute on high flame.


Add salt to taste, red chilli powder and black pepper powder and mix well.


Add soya sauce, tomato sauce and vinegar. Mix properly.


Add boiled vermicelli and stir well to combine all the ingredients.


Adjust salt and mix properly. Garnish with some chopped spring onion.


Vermicelli Chow mein is ready to serve.

Tips:

  • According to your taste, all the sauces like tomato sauce and soya sauce are adjustable.
  • You can make it more or less spicy according to your taste.
  • Do not overcook the vermicelli otherwise it will become mushy.
