This is a perfect breakfast for weight loss as it helps to reduce overall calorie intake by a person and an ideal food for diabetic patients. This is a vegan and gluten free recipe. This is also a quick and easy recipe. This recipe is a perfect option for those people who does not have much time for cooking their breakfast specially collegians and working women. Now a days you can buy sprouts from market but homemade sprouts are fresh and healthy as we use raw sprouts for this recipe. So it is better to sprout beans at home. You can use a sprout maker which is easily available in market.
 
Sprouted-Moong-and-Corn-Stir-Fry

Sprouted moong refers to whole moong beans, which have been sprouted. They're a good source of protein, fiber and vitamins. They are high in nutrients and antioxidants. They may protect against heat stroke, aid digestive health, promote weight loss and bad LDL cholesterol, blood pressure and blood sugar levels. This is a very delicious and healthy recipe.
The plus point of this recipe is that the ingredients depend on your preference and availability. I have used sprouted Moong, corn, onion, cabbage, french beans and spring onion. You can use sprouts and vegetables of your choices or which are available in your kitchen.

Ingredients:

2 cup sprouted moong
1 tbsp. oil
1 onion, finely chopped
1 green chilli, slit in between
1 cup cabbage, shredded
6-7 french beans, chopped
1 tbsp. spring onion, chopped
¾ cup sweet corn
Salt to taste
¼ tsp. red chilli powder
¼ tsp. chana masala (optional)
¼ tsp. chaat masala
¼ tsp. black pepper powder
½ lemon juice
Chopped spring onion and coriander leaves for garnishing

Instructions:

Wash and soak moong in enough water for up to 8 hours or overnight. Drain water completely and tie them in a clean damp cloth or you can place it in a bowl and cover it with a plate. Keep it in a warm place for about 1 or 2 days or until it sprouts well.


Wash sprouts with water very well and boil in a cooker with 1 glass water for 1 whistle.


Heat oil in a pan.
Add onion and 1 green chilli slitted in between. Fry till they become translucent.


Add cabbage, French beans, spring onion and corn. Saute for 1 minute. 


Add red chilli powder, chana masala, chaat masala and black chilli powder. Adjust salt and mix well to combine all.


Add boiled sprouted moong and mix.


Squeeze ½ lemon juice and mix.
Garnish with some chopped coriander and spring onion.
Sprouted moong corn fry is ready to serve.


Tips:

  • You can add desiccated Coconut and amchoor powder.
  • You can make it a little bit sweet.
  • You may add some green peas.
  • You can add vegetables of your choice.
